TOMATO CHICKEN


Chicken cooked in rich tomato gravy

Ingredients
Chicken 1 kilogram
Onions 2 medium
Ginger 1 inch piece
Oil 1/4 cup
Star anise 1
Cinnamon 2 inch stick
Red chilli powder 1 teaspoon
Turmeric powder 1/2 teaspoon
Tomato puree 1 cup
Salt to taste
Sugar 1 teaspoon
Method
Skin and cut chicken into eight pieces. Wash the pieces well and pat them dry. Peel, wash and thinly slice onions. Peel, wash and finely chop ginger.Heat oil in a pan on moderate heat. Add star anise, cinnamon, sliced onions and chicken pieces. Stir fry for five to six minutes.

In a bowl mix red chilli powder and turmeric powder and a little water to make a paste. Add this to the chicken and mix well.

When the chicken pieces are coated with the spices, add tomato puree and one cup of hot water. Add salt and sugar and mix well. Cover the pan and allow the mixture to simmer until the chicken is tender. There chicken pieces should be covered with a rich red gravy. Remove the star anise and cinnamon and serve hot.
