Clean and cut chicken into four pieces. Make deep slits on the meat. Grind ginger, garlic, curry leaves, red chillies and rice to a smooth paste by adding some lemon juice. Mix this paste with yogurt and the remaining lemon juice. Add salt to taste. Apply this marinade on the chicken thoroughly. Rest in the refrigerator for about an hour. Heat oil in a pan. Dust the chicken pieces with refined flour and shallow fry till brown and crisp. Place the chicken in a vessel, sprinkle with two tablespoons of water and chopped coriander leaves and close with a tight lid. Keep this on burning charcoal, with a few charcoals on the lid also. Cook for about fifteen to twenty minutes, open the lid and serve immediately.Recipe Tip Guntur chillies are very famous for their fiery nature but can be substituted with any other red chillies. Yogurt is very important since it counters the heat from the chillies. |
