PEPPER CHICKEN


One of the most popular dishes of the chettinaad cuisines, chicken cooked with lots of pepper
Preparation Time : 10 minutes

Servings : 4
Ingredients
Chicken, cut into 8 pieces 800 grams
Black peppercorns, freshly ground 1 1/2 tablespoons
Oil 2 tablespoons
Curry leaves 5-6
Onions, chopped 2 large
Ginger paste 2 tablespoons
Garlic paste 2 teaspoons
Tomatoes, chopped 2 large
Green chillies, chopped 3
Coriander powder 1 tablespoon
Turmeric powder 1/2 teaspoon
Red chilli powder 1/2 teaspoon
Thick coconut milk 1 cup
Salt to taste
Fresh coriander leaves, chopped 2 tablespoons
Method
Clean and wash chicken.Heat oil in a deep pan. Add curry leaves, onions and sauté till golden.

Add ginger paste, garlic paste, tomatoes, green chillies and cook till the tomatoes turn pulpy.

Add chicken and sauté till the colour of the chicken pieces begins to change.

Add coriander powder, turmeric powder, red chilli powder, crushed peppercorns, and mix well.

Add coconut milk, salt and bring it to a boil. Lower the heat and cook till chicken is done.

Garnish with coriander leaves and serve hot.
